Wrap potatoes in aluminum foil and bake for 1 hour.
Once potatoes are done carefully remove from aluminum foil. Cut in half and remove the pulp.
In fryer or in a deep pan heat oil to 350˚. Fry potatoes for about 3-4 minutes until they are golden brown. Remove from oil and drain on a paper towel.
Fill each potato with pizza sauce, then top with mozzarella and pepperoni and lastly a sprinkle of Italian seasoning, and bake for about 10 minutes until cheese is melted.
