Sauté diced onions for a couple minutes over medium heat until transparent. Add sausage into pan breaking it up as much as possible. Cook until complete, remove from heat and set aside.
Pre-heat oven to 350˚.
Whisk eggs, sour cream, heavy cream, salt and pepper until completely combined. Add in 2/3 of sausage mixture.
Fit pie crust into pie pan, pour egg mixture into pie. Bake for 35-40 minutes.
Heat remaining sausage mix in a sauce pan. Sprinkle with flour.
Slowly pour milk into sauce pan stirring constantly Mixture will slowly thicken. Remove from heat at desired thickness.
Top each slice of quiche with some gravy, salt and pepper.
