Shepherd's Pie (Cottage Pie) Recipe

Ingredients
  

  • 2 lbs Ground Beef 2 Pounds of Ground Lamb for a more authentic recipe
  • 1 Onion
  • 2 Carrots
  • 2 Stalks of Celery
  • 2 tsp Thyme
  • 3 tsp Tomato Paste
  • 2 tsp Flour
  • 1-3/4 Cup Chicken Broth
  • 1 tsp Worcestershire Sauce
  • salt/pepper
  • 2 tsp Parsley
  • Mashed Potatoes for a more authentic version use a 50/50 blend of Mashed potatoes and Mashed Turnips

Instructions
 

  • Cook Bacon in Skillet, drain all but 1 Tbsp of Bacon Grease.
  • Add Beef (or Lamb) cook until brown.
  • Add Carrots, Celery, and Onion. Cook vegetables until they are tender.
  • Add Tomato Paste and Thyme, cook for about 5 minutes.
  • Add Flour and cook for a few more minutes allowing it to thicken up.
  • Add in your Chicken Broth, Worcestershire Sauce and add your bacon back in.
  • Stir in Parsley, Salt, and Pepper.
  • Place into a baking Dish
  • Top with Mashed Potatoes (or 50/50 Potato/Turnip Mix)
  • Bake at 375 for about 35 minutes or until golden brown.

Notes

There you have it a simple but good Shepherd's Pie with some easy modifications to make it an authentic Irish Shepherd's Pie. I hope every one enjoys this.
