Place chicken in the freezer for 10-15 minutes. Mix 2 tablespoons of butter and garlic powder, spread garlic butter onto the rolls.
Remove chicken from the freezer, thinly slice.
Heat your griddle over medium-high heat. Melt 2 tablespoons of butter or vegetable oil. Add the onion and jalapeño and saute for 8 - 10 minutes until they have softened. Transfer to a bowl and keep covered. Place rolls on griddle until toasted.
Place chicken on the griddle and top with buffalo sauce. Cook tossing occasionally until chicken is completely cooked. Place chicken in rows and top each with 2 slices of provolone.
Using a spatula scoop chicken and cheese and place in the roll, top with sauteed vegatables and dig in!
