Add chicken into a large bowl, pour in the buttermilk and salt to taste. Make sure all the chicken is nicely coated, cover and refrigerate for at least 20 minutes.
Pre-heat oven to 375˚. Add cornflakes, flour, thyme and salt to a shallow bowl, and mix until completely combined.
Take the chicken out of the buttermilk coat in the cornflake mixture. Drizzle the olive oil over the chicken.
Place in the oven and bake for 10 minutes, flip over and bake another 10 minutes.
While chicken is cooking mix together all the ingredients for the Hot Honey Sauce.
Drizzle or brush the hot honey sauce over baked chicken and serve.
