Pre-heat oven to 350˚.
In small pan belt 3/4 stick of butter, add in the spinach and minced garlic. Roughly chop the artichoke hearts and stir in. Allow to sauté for a couple of minutes.
Cut bread loaf lengthwise and widthwise, do NOT cut all the way through the loaf.
Stuff bread with mozzarella cheese, then the sautéed vegetables.
Wrap in foil and bake for 15 minutes.
Unwrap loaf, melt the rest of the butter in a small bowl and in garlic powder. Brush over the baked loaf. Sprinkle with the parmesan cheese.
Return to oven for another 10 minutes.
