Sweet Potato Bacon Fritters Recipe

Ingredients
  

  • 6 Bacon Strips Crumbled
  • 2 Medium Sweet Potatoes Peeled
  • 3 Green Onions Chopped
  • 2 Eggs
  • 3 Tbsp. Coconut Flour
  • 1 tsp. Paprika
  • Salt
  • Pepper

Instructions
 

  • Fry bacon until crispy, remove from pan but leave bacon fat in the pan, crumble bacon.
  • Peel and grate Sweet Potatoes. Place shredded potatoes in a medium bowl.
  • Add crumbled bacon, chopped green onions, whisked eggs, Coconut Flour, salt and pepper to bowl. Mix everything together until completely combined.
  • Scoop roughly 1/4 Cup of mixture and place on parchment paper and gently flatten so they are about 3/4" thick.
  • Heat 1/4 Cup of olive oil mixed with the remaining bacon fat on Medium-Low.
  • Cook fritters in heated skillet for about 3 minutes per side.
