Fry bacon until crispy, remove from pan but leave bacon fat in the pan, crumble bacon.
Peel and grate Sweet Potatoes. Place shredded potatoes in a medium bowl.
Add crumbled bacon, chopped green onions, whisked eggs, Coconut Flour, salt and pepper to bowl. Mix everything together until completely combined.
Scoop roughly 1/4 Cup of mixture and place on parchment paper and gently flatten so they are about 3/4" thick.
Heat 1/4 Cup of olive oil mixed with the remaining bacon fat on Medium-Low.
Cook fritters in heated skillet for about 3 minutes per side.
