Ingredients
  

Dip:

  • 1 15 oz. Can Black Beans, Drained and Rinsed
  • 1 15 oz. Can Black Eyed Peas, Drained and Rinsed
  • 1/2 Cup Corn Kernels
  • 3 Green Onions Diced
  • 1 Small Red Onion Diced
  • 2 Bell Peppers Chopped
  • 1 Jalapeño Seeded and Diced
  • 1/2 Cup Cherry Tomatoes Sliced
  • 1/2 Avocado Chopped
  • 1/2 Cup Cilantro Chopped

Dressing:

  • 1/4 Cup Olive Oil
  • 1 Tbsp. Lime Zest
  • Lime Juice of 1 Lime
  • 1 tsp. Cumin
  • 1 tsp. Honey
  • 2 Garlic Cloves Minced
  • 1/2 tsp. Paprika
  • Salt

Instructions
 

  • Mix together all of the salad ingredients in a large bowl.
  • In a smaller bowl mix together all the ingredients for the dressing. Pour the dressing over the salad and mix everything together.
